Award winning chef Carlo Carozzi is the man behind The Peruvian and solely responsible for bringing the flavours of Peru to Scotlands capital.
A native of Lima, Carlo has lived in Scotland for over 20 years and although not classically trained his passion for food and recreating flavours of his home country is obvious. Having burst onto the street food scene in 2017, Carlos offering has not gone unnoticed, gaining admiration from the likes of celebrity chef Gizzi Erskine.
Using a number of ingredients that most people in the UK will never have heard of, let alone tasted, Carlo imports some of his produce direct from the hills of Peru to ensure his dishes are authentic. Chilli Aji Amarillo, Queso Fresco and even Purple Corn.
From humble beginnings cooking from a pitch in the grounds of a graveyard just off Lothian Road, Carlo has created a menu to cater for all tastes: for the adventurous the likes of anticuchos (cows heart marinated for 24 hours in a Peruvian spice blend) is a must try delicacy to the more well known Latin American tacos.
